Easy Toddler Breakfast: Egg Toast
This recipe for egg toast was one of my strategies on mornings like those. Sure, when you make it on the stove it is a little tastier, but it dirties a skillet and a spatula and takes too long. This dirties a fork and a plate and it takes about two minutes.

I dont like that. Microwave eggs yuck!!!!. It seems to me that your coffee is more important. It only takes 3 minutes or less to cook an egg. You could even add cheese. If you use a tiny amount of cooking spray, it makes for easier cleanup. You could cook your eggs and toast while you are making your coffee, or just get uo five minutes earlier.
I agree with above. Your child should be more important. And after he wakes up, I can’t blame the kid to be starving, my kid wakes up the same way. I put other stuff off, to make him breakfast. He comes first! And besides, it only at least 4 pieces of dishes dirtied. Get over it.

I sure didn’t say that I was going to make coffee before I fed my son. That’s never been the case. What I am saying is that I’m not a morning person and before I’ve had coffee I’m definitely not in the right frame of mind to whip up waffles and omelets.
I still want a nutritious breakfast for him, however, but since he’s so hungry right then I need something that’s also fast. The element of speed is for him, not for me. Microwaving this breakfast cuts down on the time it takes to get him satisfied and is no less healthy than frying it in a skillet. In fact, it’s probably more healthy. (Many non-stick sprays contain alcohol, silicone, unnecessary fat, etc.)
If you are always up and at ‘em before your child wakes up and you’re always in a pleasant and cheerful mood, and you never use your microwave to save time, or you couldn’t care less about the amount of time you spend doing dishes (versus hanging out and playing with the kids), then that’s totally cool. This recipe isn’t going to be something you’ll ever need.
But you don’t need to be judgmental about my parenting or try to imply that I don’t care about my child’s needs. That’s just silly. And it’s insulting to me and every other parent who has ever used a shortcut to feed a hungry child. The reality is — there are some mornings that don’t go as planned, and this is for those mornings (as rare or regular as they may be.)
As with all parenting advice, it will work for some parents, and others… not so much.

I tried it my kid and he loved it!.. Plus you can add cheese and other fun stuff to it.
It doesnt help to be judgemental here, especially since its tough enough out there. We all need to be more supportive of one another and our efforts. Every situation is different, people dont know how mornings are in every family…busy sometimes and maybe not so maybe this advice will work for some parents and maybe not others but the negative feedback doesnt help. Where’s the peace in the world? Its just eggs.
If you are pressed for time and don’t want to buy alot of prepackaged food I make up big batches of pancakes or French toast and reheat them in the toaster. I do a couple pounds of bacon at a time and then reheat them a few pieces at a time through the week. It is an easy way to make good food fast. I can’t wait to try the eggy toast with my little ones. I am also trying the peanut butter banana bread, hoping it is a hit. We have trip coming up and I hope it will help them get more than fries and chicken nuggets in them, plus seem to be easy to transport.
I have found that having a sked. of what to have for breakfast helps. Like..
Mondays - Oatmeal or Grits ( all instant)
Tuesdays - Eggs (fried or scrambled)and Bacon or sausage
Wed. - Pancakes, Waffles or French Toast ( they could be the store bought-ready made ones)
Thurs. - Cold Cereal
Fridays - Eggs and Sausage or Bacon (soft boiled or hard boiled)
Sat. and Sundays are eat out days. Break for me.
I also make sure that I have fruits that don’t need to be sliced like raspberries, blueberries and blackberries. I also make sure that I have yogurt stocked.
If I know what the week ahead is going to be like, most of the time, I cook during the weekends.
I kind of feel disheartened at the comment of opening to segment… re-read… what have we become that we worry its another spoon, fork or what have you dirty as opposed to our child being fed properly….. i can see in the west there are tooooo many processed foods, but then the cooking method of these processed foods is disgusting too… ping it for 2 mins and its done…. do we really think our children are getting any sorce of decent nutrition this way?
I don’t understand why everyone is getting so upset about this meal. Many children get sugar and preservative packed cereals everyday. At least this meal has protien and whole grains. I’m a bit of a food and nutrition nazi myself (so much so that Daddy and Grandma call me at work to check if I will allow certain foods). Many mothers do not have the time to cook a “home-cooked” meal; I appreciate the author sharing a tip to help busy moms who still want their kids to have a healthful meal.
I have never replied posted a reply on line before but felt I just couldn’t stay quiet. For those of you who don’t agree with the approach here, that’s totally fine. However, what an amazing world it would be if, as women and mothers, we supported each other positively instead of expressing judgment and negativity. We face enough challenges without tearing each other down so let’s all try to appreciate differences, share what works for us and praise the efforts we are all making. Be a role model to your children and challenge yourselves to look past your own experiences and acknowledge not everyone lives their life like you and that’s ok. Look for opportunities to educate and support and just think what an easier time it would be for all of us.
I just had to say it: If you can’t say anything nice, don’t say anything at all. Remember that? Obviously some of you don’t. I appreciate the recipe and others like it. I’m sure there are many Mom’s out there who would rather give their child something healthy and fast than something unhealthy and fast just to please them. There are those days when you DO get up 5 minutes early, but something happens (a surprise poopy diaper that doesn’t all end up in the diaper, an older or younger sibling with an I-can’t-find-my-favorite headband! crisis, you name it!) and this kind of recipe is GREAT. Thank you for sharing it!
It’s great if you have time if you can put some finely chopped onions/tomato/herbs & a bit of pepper(salt optional) & some cheese …I do this in the sandwitch presser.
I must say that as a working grandpa who takes care of a 15 month old I look for all sorts of ways to make life a little easier. Although I would never microwave and egg, I do make a one egg omelette for her with a piece of whole grain toast at least two days a week. we eat yogurt, fresh fruit and if we are running late, even an occasional cereal bar. Like the others said,being judgemental is easy. I work an 80 hour week but i still find time to make sure she starts her day off well. MY mom feeds her lunch and then my daughter feeds her dinner. But Popi has breakfast under control. I still appreciate the idea though and find this supportive so keep posting!
