Cupcake Cones

Tuesday August 18, 2009
If you're planning a birthday with toddlers on the guest list and you're considering baking or ordering a cake, think about these cupcakes cones instead. The cake is baked inside an ice cream cone for easy handling and clean-up.

I'm also thinking that baking muffins inside an ice cream cone would be fun. You could go on a morning walk and take breakfast with you! If you bake fruit (like blueberries) into them then who needs frosting? Or you could frost with a fruit spread or nut butter (Mmmm Nutella!) if your toddler is a fan.

If your toddler hasn't had nuts yet, try an alternative to peanut butter like cream cheese or a spread made from sunflower seeds. One brand we like is Sunbutter, but you can make your own sunflower seed butter, too. Sunflower seeds are not on the Big 8 list of food allergy offenders (soy butter is) and they're not tree nuts or related to peanuts so there's less chance of an allergic reaction. They do have a very similar taste and consistency, though.
