So, when "the man" isn't cooking for me, that means it's Taco Cabana night or I'm cooking. And when I cook, I usually get some wild hair and have to cook something I've never made before. I don't get too exotic. I mean, I'm not in there making squid or anything, but I like to find meals that look fancy schmancy but are easy to make. I like the illusion of complication, but come on. I'm a mom, student and member of the workforce over here, so the illusion is usually where it ends.

I've always been impressed with stuffed chicken breast recipes like chicken Kiev or chicken cordon bleu, so I set out to find something like that and this is what I found. It was fun making, turned out pretty well, and I took pictures along the way so you can make it yourself. Or have your version of "the man" make it. Either way, it's dinner on the table.
