Peanut Butter Banana Bread

This banana bread has the protein power of peanut butter added. Serve with a little jelly for a great toddler breakfast.

INGREDIENTS:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup softened butter
  • 1 cup sugar
  • 1 ripe, mashed banana
  • 1 cup milk
  • 1 egg
  • 1/2 cup creamy peanut butter

PREPARATION:

Mix flours, baking soda, cinnamon and salt.

In a separate bowl, cream butter and sugar.

Add banana, milk and egg to butter mix and beat until blended.

Add peanut butter and blend well.

Stir in flour mix just until combined (do not overmix).

Pour batter into a buttered, 9 inch loaf pan and bake at 350 degrees F about an hour or until toothpick insterted into center comes out clean.

Cool in pan 15 minutes before slicing.

Keep remaining loaf tightly wrapped with plastic wrap to prevent moisture loss.
