One Pan Potatoes and Chicken Dijon

This dish is a quick and easy dish to prepare, and as a bonus- it cooks in one pan.

You'll need:

  • 4 medium potatoes, sliced 1/4 inch thick
  • 1 pound boneless, skinless chicken breasts, cut into 1/2 inch slices
  • 2 Tbsp. vegetable oil
  • 1/4 cup honey-dijon barbeque sauce

    Directions:

  • Begin by microwaving the potato slices for eight minutes, or until just tender.
  • While the potatoes are cooking, brown the chicken in vegetable oil over high heat for five minutes.
  • Add the potatoes and saute until they are lightly browned.
  • Add barbeque sauce and heat through.
