This dish is a quick and easy dish to prepare, and as a bonus- it cooks in one pan.
You'll need:
4 medium potatoes, sliced 1/4 inch thick
1 pound boneless, skinless chicken breasts, cut into 1/2 inch slices
2 Tbsp. vegetable oil
1/4 cup honey-dijon barbeque sauce
Directions:
Begin by microwaving the potato slices for eight minutes, or until just tender.
While the potatoes are cooking, brown the chicken in vegetable oil over high heat for five minutes.
Add the potatoes and saute until they are lightly browned.
Add barbeque sauce and heat through.
