Stuffed Chicken Breasts: Veggies Included

You're going to need green onions and mushrooms. I used one bunch of onions, chopped, even though the recipe called for two. I bought two, but once you start chopping them up it looks like an awful lot of onions. I used fresh mushrooms and sliced them, but you could buy sliced to save even more time. The recipe called for 1/4 pound, but I used a half pound because I really like mushrooms. Sautee these in a little olive oil and a tablespoon of butter. Don't drain any of the oil or butter off. While you're doing this, you can be doing step three, as well.
