Easy Strawberry Shortcake

Here's an easy recipe for strawberry shortcake that you can make with the kids.

You'll need:

  • 4 cups fresh strawberries, cleaned and sliced
  • A 1 lb. pound cake, sliced into 3/4 inch thick slices
  • 1 cup heavy whipping cream
  • 3 Tbsp. powdered sugar
  • 3/4 tsp. vanilla

Directions:

  • Mash or blend 2 cups of the strawberries.
  • Add the rest of the sliced strawberries and refrigerate until ready to use.
  • Beat the cream with the powdered sugar and vanilla.
  • Serve by topping slices of pound cake with strawberry mixture and a dollup of cream.

Tips:

  • Kids may not be able to participate in blending and cutting, but they'll have lots of fun if you let them use a potato masher to mash the strawberries.
  • Even the smallest hands love taking part in the assembly of this dessert. Have fun with it.
  • For a more festive treat, you can add a few blueberries or add blue food coloring to the cream for a Fourth of July treat, green for Christmas, etc.
  • For busy days, use Cool Whip or Redi-whip instead of mixing your own.
