| Easy Strawberry ShortcakeHere's an easy recipe for strawberry shortcake that you can make with the kids.
You'll need:
- 4 cups fresh strawberries, cleaned and sliced
- A 1 lb. pound cake, sliced into 3/4 inch thick slices
- 1 cup heavy whipping cream
- 3 Tbsp. powdered sugar
- 3/4 tsp. vanilla
Directions:
- Mash or blend 2 cups of the strawberries.
- Add the rest of the sliced strawberries and refrigerate until ready to use.
- Beat the cream with the powdered sugar and vanilla.
- Serve by topping slices of pound cake with strawberry mixture and a dollup of cream.
Tips:
- Kids may not be able to participate in blending and cutting, but they'll have lots of fun if you let them use a potato masher to mash the strawberries.
- Even the smallest hands love taking part in the assembly of this dessert. Have fun with it.
- For a more festive treat, you can add a few blueberries or add blue food coloring to the cream for a Fourth of July treat, green for Christmas, etc.
- For busy days, use Cool Whip or Redi-whip instead of mixing your own.
