Ingredients:
- 1 2/3 cup flour
- 3 teaspoons baking powder
- 3 teaspoons sugar
- 1/4 teaspoon salt
- 1 1/2 cups chocolate soy milk
- 1 large or 2 small mashed bananas
Preparation:
Mix the dry ingredients together in a small bowl.
Mix the bananas and milk into the dry ingredients, mixing just until you can see no traces of flour. It's OK if it's a little lumpy.
Heat a nonstick skillet on medium-high and spray liberally with oil spray when the pan is hot. (They tend to stick a bit without enough spray.)
Use a measuring cup or ladle to pour 1/4 to 1/2 cup of batter into the skillet, depending on the size of pancakes you desire.
Flip the pancakes when they are dry around the edges and bubbles have started to appear on the surface and cook for 1-2 minutes longer and serve.
Makes about 12 pancakes.
