Ingredients:
- 1 cup flour
- 1 tablespoon sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1 egg
- 2 tablespoons melted butter
Preparation:
Mix the dry ingredients together in a small bowl.
In another small bowl, beat the egg and then add the milk and melted butter.
Add the wet and dry ingredients together, mixing just until you can see no traces of flour. It's OK if it's a little lumpy.
Heat a nonstick skillet on medium-high and spray with oil spray when the pan is hot.
Use a measuring cup or ladle to pour 1/4 to 1/2 cup of batter into the skillet. This batter is thick, so you may need to use the side of the cup or bottom of the ladle to spread the batter around. I can usually make three pancakes in my skillet at one time.
Once the skillet is hot, I usually find that keeping it on about medium heat keeps it hot enough to cook yet not burn.
Flip the pancakes when they are dry around the edges and bubbles have started to appear on the surface and cook for 30 seconds to 1 minute longer and serve.
Makes about 8 small pancakes.
