Three Ingredient Peanut Butter Cookies

These cookies are easy to make, especially with kids. There's just three ingredients and one measuring cup to worry about.

Ingredients:

  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 egg

Preparation:

Combine all ingredients and mix until smooth.

Drop by tablespoonfuls on baking sheet lined with parchment paper.

Bake at 350 degrees F for 6 to 8 minutes, careful not to overbake or cookies will be too crisp.

Unbelievable. I doubted that this would actually make cookies. I actually made it the first time with a peanut butter we didn't particularly like and they were gone in minutes! I then made them with Peanut Butter and Co's White Chocolate Wonderful. Ridiculous. Lastly, I made them today for a Passover party at the temple and I used almond paste because some people don't eat peanuts during Passover. We got rave reviews! It couldn't be simpler or faster or more delicious. I have mostly made them plain but I have also heated jelly in the microwave and drizzled them and I've also dotted melted chocolate in the middle. I've made them six times and each time they came out perfectly.
