Peanut Butter and Jelly Cookies

These peanut butter and jelly cookies are as fun to make as they are to eat. Kids love filling the scooped out middles.

INGREDIENTS:

  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/4 to 1/2 cup jelly (any kind or assorted)

PREPARATION:

Combine all ingredients except jelly and beat thoroughly until mix forms a dough ball.

Roll into 1 inch balls and place on lightly greased cookie sheet, 3 inches apart.

Use a spoon to make a "bowl" in the middle of each cookie.

Spoon some jelly into each "bowl."

Bake at 325 degrees F for 11-15 minutes or until cookies are golden brown.
